1 8 ounce package of mushrooms
1 tablespoon olive oil or salad oil
2 large boneless chicken breast halves (about 1 pound)
1/8 teaspoon pepper
2 tablespoons dry marsala wine

Directions:
Cut mushrooms into quarters. In 10 inch skillet over medium high heat, in hot oil cook chicken breast halves, skin side down, until golden brown, about five minutes. Turn chicken; sprinkle with pepper and 1/4 teaspoon salt; reduce heat to medium; cook chicken until juices run clear when pierced with a knife, about five minutes longer. Remove chicken to plate. In drippings in skillet, cook mushrooms and 1/4 teaspoon salt until mushrooms are golden brown and all liquid has of evaporated, stirring frequently. Add marsala wine to mushrooms, stirring to loosen any browned bits from the bottom of skillet. Return chicken breast halves to mushroom mixture; heat through. To serve, spoon chicken on to dinner plates; top with mushroom sauce. Makes two servings
