2 ounces onion, small dice
2 ounces butter
2 ounces flour
5 ounces whole milk
1 pound salmon, poached and flaked
2 teaspoons fresh dill, chopped
Salt and Pepper to taste
4 teaspoons lemon juice
Flour, seasoned with salt, pepper, and paprika
Egg wash
Panko
Frying oil

Directions:
Directions:
Sauté onion in the butter until translucent. Add flour and cook to make a white roux. Add milk and cook the sauce until very thick. Remove the sauce from the heat and transfer to a mixing bowl. Add flaked salmon and season with dill, pepper, salt and lemon juice. Mix well. Spread mixture in a pan and refrigerate until cold. Portion out mixture and form into cone shapes. In separate three bowls, have you flour and paprika, egg wash and panko. Bread the croquettes and deep fry until done. Place on tray/plate with paper towels to absorb excess oil.
