2 C flour
1 tsp baking soda
1 tsp baking powder
¾ tsp salt
1 1/3 C sugar
½ C shortening (room temp)
2 eggs unbeaten
1C mashed, fully ripe bananas (2-3)
½ C milk
½ C sour milk
1 tsp vanilla
½ C coarsely chopped nuts

Directions:
Directions:
Stir shortening until soft. Stir in dry ingredients. Add ¼ C milk, banana and mix till all flour is damp (it should take about two minutes on LOW speed). Add egg, nuts, and remaining milk (¼ C). Mix on low speed for 1 min. Fill two 9” layer pans. Bake at 375° for about 25 min. Cool in pan for 5 min and then loosen with spatula and remove from pan to cool. Cool completely before frosting.

Side note: For pans it is best to line the bottom with paper or grease them really well.
