1 tbsp. olive oil
1 red bell pepper, chopped
1 cup diced pineapple, fresh or canned
cup thai sweet chili sauce, or more to taste
2 green onions thinly sliced

For the chicken:
cup vegetable oil
1 lb. boneless skinless chicken breast, cut into
1-inch chunks
1 cup all-purpose-flour
2 large eggs beaten

1. Heat vegetable oil in a skillet over medium high heat.

2. Dip about the chicken in beaten eggs, add to a large ziplock bag of flour, shake really good, carefully add chicken to hot oil. Cook until evenly golden and crispy. Transfer to a paper towel-lined plate.

3. Heat olive oil in a large skillet over medium high heat. Add bell peppers and pineapple and cook, stirring occasionally, until tender, about 3-4 minutes. Stir in chicken and thai sweet chili sauce until well combine, about 1-2 minutes.

4.Serve immediately, garnished with green onions.
