1 YELLOW ONION, CHOPPED
3/4 LB. FINELY CHOPPED MUSHROOMS
2 T. FLOUR
5 C. BEEF BROTH
5 T. UNCOOKED BARLEY
JUICE OF 1/2 LEMON
SALT AND PEPPER TO TASTE
3 T. FINELY CHOPPED PARSLEY

MELT BUTTER IN A SAUCEPAN. ADD ONION AND MUSHROOMS. COVER AND STEAM OVER LOW HEAT FOR 10 MINUTES. STIR IN FLOUR AND ADD BEEF BROTH. ADD BARLEY AND SIMMER FOR 30 MINUTES UNTIL BARLEY IS TENDER.

ADD LEMON JUICE AND TASTE SOUP, ADDING SALT AND PEPPER IF NECESSARY. GARNISH WITH PARSLEY.
