Beat 3 eggs until light and foamy.
Add (mixed) 3 c. flour, 1 t. soda, 1/4 t. baking powder, 1 t. salt, 3 t. cinnamon, c. chopped nuts (optional).
Mix well.
Add 1 c. oil, 2 c. sugar, 2 c. grated zucchini (use very small, tender zucchinis - about 3 to a cup), and 2 t. vanilla.

Butter loaf pans and line with waxed paper. Bake @ 325 degrees for 1 hours or until done.
