2 T. butter
2 garlic cloves, chopped
1/2 medium onion, chopped
5 oz. spinach
1 t. salt
1 t. pepper
1/3 c. breadcrumbs
4 oz. cream cheese
1/4 c. parmesan cheese
2 T. dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon filet
1 t. salt
1 t. pepper
1 egg, beaten

Preheat oven to 425º
melt butter in pan. add garlic and onions. cook until translucent. Add spinach, salt and pepper until wilted.
add breadcrumbs, cream cheese, parmesan, dill and stir till combined. remove from heat. set aside.

smooth out puff pastry, place salmon in middle. place couple spoonfuls of spinach/cheese mixture on salmon. fold edges of puff pastry over, trim excess.

Brush with beaten egg and tops and sides ....score with a knife, cutting shallow diagonal lines to create crosshatch pattern.

brush again with egg. bake for 20-25 minutes until pastry is golden brown
