Adjust amounts for how many you're feeding

5 medium potatoes
(cook until done -- like for potato salad)
1 medium onion, chopped
1 cube butter
1 can cream of chicken soup (DO NOT ADD WATER)
1 cup sour cream
2 cups grated cheddar cheese

Directions:
Directions:
Par boil potatoes, let cool

Sauce: Saute onions in butter. Mix in soup, sour
cream and cheese. Simmer on low for approx. 20
minutes.

Grease bottom of baking pan, layer sauce and potatoes,
starting with sauce. Top with grated cheese. Bake at
350 degrees for approx. 45 minutes or until bubbly and
lightly browned.

The more sauce between the layers the better!!

OMG, my Auntie Mary was famous for her Ham and Cheesy potatoes!! I swear she could make a potato a feast!!
