1 1/2 lbs. pork tenderloin, sliced into 1 in thick pieces (Or Chicken)
1/2 c. flour
2 T. butter
2 T. oil
1/2 c. dry sherry or marsala
1/4 c. water
1/2 c. chopped onion
1 clove garlic, pressed
1 t. salt
1/4 t. pepper
1/4 t. thyme
1/4 t. rosemary
1/4 t. oregano
2 c. slice mushrooms

Dredge meat in flour, brown meat in oil/butter. Stir in sherry and water. Add onion, garlic, salt, pepper and herbs. Cover and cook over low heat for 30 minutes. Add a little more water if needed. Add mushrooms and cook covered 15 more minutes.
