2 large Sweet Potatoes, peeled and cut into fries
2 T. Olive Oil
Sea Salt and fresh Ground Pepper (to taste)
Fresh Parsley (for serving)

Directions:
1. Preheat oven to 400F.

2. Toss the sweet potatoes with the olive oil and a pinch of salt and pepper.

3. Lay on a baking sheet in a single layer.

4. Bake for 35-40 minutes, until fries are lightly browned and tender.
