1 quarter whole chicken, cut into pieces
4 c. coarse bread crumbs
¾ c. chicken fat
1 ¼ tsp. sage
⅛ tsp. pepper
2 tbsp. onion, finely chopped
½ c. cream
1 ½- 2 c. chicken broth

Directions:
Directions:
Simmer chicken until tender in water and remove meat from the bone. Skim off fat and measure broth. Mix bread crumbs, chicken seasonings, onion, and cream. Add broth/fat slowly. Blend gently. Pour into greased casserole and bake at 350º for 35 minutes, and then 375º for 10 minutes.
