2 lb. Sweet Potatoes, halved
¼ c. Olive Oil
1 tsp. Honey
Seasonings of your choice: Cumin, Chili Powder, Cinnamon, Red Pepper Flakes
Sea Salt and fresh ground Pepper to taste

1. Preheat oven to 400º degrees F.

2. Toss the potatoes with the olive oil, honey, and any seasonings you may like. Season with salt and pepper and lay on a baking sheet.

3. Roast for 20 minutes, flip and continue roasting for 10-15 more minutes, until browned and tender. Serve warm.

Add mini marshmallows to the last 5 minutes of roasting
Mix chopped pecans with cinnamon and sugar and top for the last 10-15 minutes
