Ministrone Recipe

16 slices bacon
4 cups chopped onion
16 cloves garlic, minced
1-1/4 pounds ground beef
4 cups minced celery
4 cups cubed carrots
8 cups tomato puree
8 (14.5 ounce) cans stewed tomatoes
4 (14 ounce) cans beef broth
4 (10.5 ounce) cans condensed French onion soup

20 cups water
1 cup red wine
1 tablespoon and 1 teaspoon dried oregano
1 tablespoon and 1 teaspoon dried basil
salt and pepper to taste
4 cups chopped zucchini
8 cups spinach, rinsed and sliced
4 cups uncooked spinach pasta
4 (15 ounce) cans garbanzo beans, drained
1 cup chopped parsley

In a large stock pot, cook bacon and drain off fat. Add onion, garlic, and beef. When onions are translucent, add celery, carrot, pureed tomatoes, whole tomatoes, broth, condensed soup, water, wine, oregano, basil, salt and pepper. Cook for 15 minutes.

Stir in zucchini, spinach, pasta, garbanzo beans and parsley. Cook for 15 minutes and serve with fresh Parmesan cheese.
