1 pt. oysters
1½ cups of cream and oyster liquor mixture
1½ cups coarse cracker crumbs
( I use saltine and Town House)
salt and pepper
½ cup butter

Directions:
Directions:
Pick over oysters and drain. Grease baking dish with butter
and cover bottom with ⅓ of the crackers crumbs, with
pats of butter over the top. Cover with half of the oysters and season,
add ⅓ of the cracker crumbs with pats
of butter over the top, then add the other half of the oysters,
season. Cover top with remaining crumbs and pats of butter
over the top. Pour cream and oyster liquor
mixture down the sides of the bowl until the cream reaches the top
of the casserole (not top of the bowl). May need to add more cream,
Bake at 350 º for about 20 minutes. Check for browning, may
add 10 minutes.

The first time I made this casserole for a family dinner,
I remember Granny Annie Ashford standing by me and
telling me exactly how to layer it and to pour the cream
mixture into the side of the bowl. So each time I make
