4 cups chopped cooked chicken breast
2 1/2 (12oz) shredded 4 cheese Mexican blend cheese
1 (8oz) whipped cream cheese
1/2 cup of butter, melted
1 teaspoon minced garlic
1/2 teaspoon freshly ground black pepper
1 (10oz) cream of chicken
1 (4.5oz) can chopped green chiles, drained
12 (8-inch) flour tortillas
1 tablespoon canola oil
Cooking spray
1 cup finely shredded sharp cheddar
1/2 cup chopped green onions

Preheat oven 350º

Combine first 9 ingredients in a large bowl. Set aside 1 cup of chicken mixture.

Heat large skillet over medium heat. Working with 1 tortilla at time, brush oil on both sides of tortilla. Add tortilla to pan and cook for 5 seconds on both sides until toasted and soft. Remove from pan and fill with 1/2 cup of chicken mixture; Roll jelly roll style; place filled tortilla seam side down in a 13x9 inch baking dish coated with cooking spray. Repeat procedure with remaining tortillas, remaining oil, remaining chicken mixture. Spread reserved 1 cup chicken mixture evenly over enchiladas. Cover and bake for 25 minutes. Uncover and sprinkle with cheddar cheese and green onions; bake an additional 5 minutes or until cheese melts
