2 pounds ground beef
3 eggs, slightly beaten
1 cup breadcrumbs
1/2 of an 8 oz can tomato sauce
1/2 tsp. dry mustard
1 medium onion, finely chopped (or used dried equivalent, or onion powder)
1 tsp. salt
1/2 tsp. pepper
Tomato Sauce

Tomato Sauce ingredients:
1 8oz can tomato sauce
1/2 cup catsup
1/2 cup water
1 Tbsp sugar
1/2 tsp garlic powder
salt and pepper to tast

Directions:

For meatloaf:
Combine all ingredients except Tomato Sauce in a large bowl and mix well. Shape into a loaf in a lightly greased 11x7x2 inch pan. Bake at 350º for 35 minutes. Drain any juices that have accumulated. Pour Tomato Sauce over loaf and cover with foil. Bake 20 minutes.


Tomato Sauce: combine all ingredients and blend well. Save some to put on the sliced meatloaf after cooking.

Meatloaf mixture can be mixed and formed into a loaf early in the day. Cover and refrigerate until ready to bake. Leftovers freeze well, so why not double the recipe?
