Salad:
1 head of Romaine lettuce (ripped with your hands into bite size pieces)
1/2 cup freshly shredded parmesan cheese
1/2 cup croutons

Dressing:
1 can of anchovies (no one will even know that they are in the dressing)
*1 egg (coddled)
1/2 cup extra virgin olive oil
1 lemon (juiced)
Freshly grated black pepper
2 tsp. Worcestershire sauce

Directions:
Directions:
Mix the salad components (except for the crouton) and refrigerate.
Dressing;
In a food process or blender, mix the anchovies, egg, lemon juice and sauce.
With the machine running, slowly add the olive oil to emulsify.
Toss the salad in the dressing. Add the croutons and serve, passing around the black pepper mill.
The dressing can be made 1 day in advance.


* How to coddle an egg:
Bring the eggs to room temperature (about 30 minutes.).
At the same time, bring water to a boil in a small saucepan.
While the water is heating up, prepare an ice bath which is simply a bowl full of ice water). Set aside.
Place egg in a separate bowl or mug. Pour hot water over the egg and time for exactly one minute.
Spoon out the egg and gently plunge into the ice water bath.

I love this recipe. It is so good with a seafood or beef dish. You also can add cooked shrimp, chicken, salmon or crab to make this a meal.
