1 egg
¼ cup sugar
¼ cup cooking oil
¼ cup molasses
½ tsp salt
½ tsp baking powder
¼ tsp baking soda
¾ tsp ginger
½ tsp cinnamon
1 cup flour
⅓ boiling water

Directions:
Directions:
Preheat oven to 350º
Grease a 4½ x 8 x 2½ loaf pan

Whisk egg with sugar, oil and molasses.
Add salt, baking powder, baking soda, ginger, cinnamon,flour, and boiling water.
Whisk until smooth.
Pour into loaf pan and bake for 30 minutes or until tests done.

Turn out on board and cut thick slices.

Enjoy while still warm with whipped cream or applesauce.
