2 cups sugar
2 cups flour
2 eggs
1 tsp. baking soda
1 tsp. vanilla
16 oz. can of un-drained crushed pineapple

ICING:
1/2 cup butter
1 cup sugar
3/4 cup evaporated milk
1 cup coconut
1 cup nuts
1 tsp. vanilla

Directions:
Directions:
In a bowl, mix the sugar, flour, eggs, baking soda, vanilla and pineapple until well blended using a spoon. In a 13 x 9 cake pan, pour the batter and bake for 35 - 40 minutes in a preheated oven to 350º. To make the icing, mix together the batter, sugar and evaporated milk and cook for 5 minutes over medium heat to thicken a little. Turn off the heat and add in the coconut, nuts and vanilla then ice the cake while it's hot.
