1 bone-in ham shank (cheap ones usually better)

Glaze:
2 cans crushed pineapple
1tsp mustard
1 can sliced pineapples, not drained
1tsp lemon juice
2Tbsp cornstarch
2+ cups brown sugar

Directions:
Directions:
Cook ham at 300º for 7 hours in roasting pan. When tender and falling off bone, remove fat and bones, pour liquid out of pan and separate meat into chunks.
Glaze: Reserving pineapple slices, put all of the glaze ingredients in a pot over medium high heat and boil for 2-3minutes. Pour glaze over chunked ham in roasting pan, then place pineapple slices on top. Bake 300º for 30 minutes.
