2 tbsp. Butter
3 Egg Yolks
7 tbsp. Cornstarch
1 ½ c. Hot Water
1 ½ c. Sugar
1 ½ tsp. Salt
½ c. Lemon Juice
1 tbsp. Lemon Zest
Directions:
Directions:
Preheat oven to 375 degrees. In a medium saucepan, whisk corn=starch water, sugar and salt =l cool over medium heat stirring constantly. Bring to a boil for 1 minute. Remove from heat and gradually whisk hot mixture into egg yolk. Return mixture to saucepan and cook on low for 1 minute, stirring constantly. Remove from heat and stir in butter, lemon juice, and zest. Ina bowl beat egg whites and cream of tartar until stiff peaks form. Gradually add sugar until stiff peaks form. Fill baked pie shell with filling and to with meringue to completely cover the edges. Bake for 12 minutes.

Combine top three ingredients and put on top of filling in the pie shell.
