2½ cups flour
2½ tsp baking soda
½ tsp salt
2 eggs
¾ cup sugar
¼ cup veg oil
2 very ripe bananas (mashed)
½ cup applesauce
2 cups butter milk
4½ raisin bran
1 cup chopped walnuts or pecans

Directions:

Mix flour, baking soda, salt
in separate large bowl, beat eggs add sugar and oil, beat again
stir in applesauce and mashed bananas
alternate adding buttermilk and flour mixture
stir in raisin bran and nuts (will be thick)
cover and refrigerate over night
stir again and spoon into muffin pans sprayed with oil or lined with cup cake liners
bake in preheated oven at 400º for 15 minutes

This is the recipe for my favorite breakfast. Over the years, my friend Bette and I have adjusted the ingredients to justify having dessert for breakfast. We have added the bananas and applesauce and reduced amount of oil and sugar.
