Ingredients: 1 lb. lean ground beef 1 medium onion, diced 1 can Mexican corn, drained 1 can diced tomatoes 1 small can of tomato sauce 1 pkg. taco seasoning 1 tbsp. olive oil
TOPPING: 1 pkg. Jiffy Cornmeal mix 1 egg 1/3 cup plus 2 tbsp. milk (mixture should not be thick)

Directions:Preheat oven to 375º. Lightly grease a 9 x 13 x 2 casserole dish. Heat the oil in a skillet, add onion and sauté for 2 - 3 minutes over medium heat. Remove from skillet and add ground beef. Cook ground beef until no longer pink. Pour off excess fat. (You also can drain on paper towels to remove more of the fat.) Return beef and onions back into skillet over medium heat. Add taco seasoning and coat meat and onions. Add drained corn, diced tomatoes and tomato sauce. Bring mixture to a light simmer. While mixture comes to a simmer, prepare cornmeal mixture. Pour beef mixture into casserole dish. Spread cornmeal mixture thin and evenly over beef mixture. Bake in oven for 20 - 25 minutes. If necessary, turn broiler on to brown cornmeal. |
