2 Cups Oreo Crumbs
6 T Butter
14 oz bag of Caramels
½ Cup of Milk
1 Cup of Pecan Pieces
3 8oz blocks of cream cheese
¾ Cup of Sugar
1 T Vanilla
3 Eggs
2 Squares of Semi-Sweet Choclate

Directions:
Directions:
Preheat oven to 325º (for light/silver springform pans) or 300º (for dark nonstick pans).
Mix Oreo crumbs with butter and press firmly onto the bottom and 2" up the sides of the pan.
Place milk and caramels in small microwavable bowl and microwave on high for 3 minutes, stirring after each minute, until melted. Stir in pecans and pour ½ the mixture onto the crust. Refrigerate for 10 minutes. Cover and refrigerate the remaining caramel mixture.
Beat cream cheese, sugar and vanilla with mixer on medium speed until well blended. Add eggs (1 at a time) and mix on low speed after each addition just until blended. Pour over chilled crust. Bake for 1 hour and 5 or 10 minutes until center is almost set. Run a knife or spatula around side to loosen. Cool before removing side of pan. Refrigerate for 4 hours or overnight. Just before serving, microwave remaining caramel mixture on high for 1 minute, stir and pour over cheesecake. Melt chocolate as directed and drizzle over. Store leftovers in fridge.
