Crockpot Coke Pork BBQ Recipe

3-4 lb Pork Roast Butt or Shoulder
6 oz Coke (at room temperature)
Black Pepper
Chili Powder
Garlic Powder
Brown Sugar
Salt
Worcestershire Sauce
Liquid Smoke

Trim off excess fat. Season the bottom of the roast moderately with the following seasonings:
-Salt and Black Pepper
-Chili Powder
-Garlic Powder
-Brown Sugar
-Worcestershire Sauce
-Small amount of liquid smoke (a little goes a long way)

Place seasoned pork in crockpot. Pour the coke over the top. Season the top moderately. Cover and cook on low for 12 hours.

Once roast is tender and easily pulled apart, turn crockpot off, remove roast to a large bowl or platter and let it cool. In the meantime, dispose of cooking liquid. After Crockpot cools, wash and dry it and return it to its base. Once the meat has cooled, remove excess fat and shred or break into small pieces. Return meat to crockpot. Add BBQ sauce to moisten meat. Do not add too much or it will overwhelm the meat. Add your own BBQ Sauce (our family used to use Scotts BBQ sauce but we all really like Wells BBQ sauce--all vinegar based BBQ sauces) or you can make the following BBQ sauce to add:

-1 Cup Heinz Ketchup
1/2 Cup Apple Cider Vinegar
1/2 Cup White Sugar
1/2 Tablespoon Black Pepper
1/2 Tablespoon Cayenne Pepper
1/2 Teaspoon Salt
Juice of one Lemon
