Beef Enchiladas Recipe

1 green pepper
1 onion diced
3 cloves garlic minced
3 stalks celery diced
3 lbs hamburger
1 tsp. Chili powder
1 tsp cumin
16 oz tomato sauce
1 Tb. Sugar
2 tsp salt
2 tsp cayenne (or less)
1 c cheese
1 can tomato soup

Brown hamburger. Add pepper, onion, garlic, celery. Simmer till onion, garlic, celery are cooked. Mix tomato sauce, sugar, salt, cayenne, cumin and chili powder.
Fry tortilla then fill with meat mixture. Place in pan and spoon tomato mixture over top. Sprinkle 1 cup shredded cheese over top. Bake at 450 for 20 minutes. Serve over shredded lettuce.
