½ cup onion, chopped
½ cup green pepper, chopped
6 T. butter
6 T. flour
⅛ tsp. pepper
1½ cups milk
1 cup chicken broth
4 cups ham, cubed
1-10 oz. package frozen peas
4 cups hot mashed potatoes
1 egg, beaten
1 cup cheddar cheese, shredded

In 12-inch skillet, on medium heat, melt butter and sauteonion and green pepper for about 5 minutes. Add flour and pepper, stir until smooth. Stir in milk and broth, cook, stirring until thickened. Remove from heat, add ham and peas. Pour into 3 quart casserole, sprayed with non-stick spray. In a medium mixing bowl, combine potatoes, egg and cheese. Drop by spoonfuls onto ham mixture. Bake, uncovered at 350° for 1 hour or until bubbly and browned. Serves 8 to 12.

*NOTE* Mom’s original recipe called for OLEO not butter. She used bouillon with water instead of broth, canned instead of frozen peas. She said she used leftovers and you could adjust if needed and still turn out good. Shows how old the recipe is if she used OLEO.
