3 T olive oil
1 oz pancetta or bacon finely chopped
1 large carrot, minced
2 small celery ribs, minced
1/2 medium onion, minced
1 1/4 lbs coarsely ground beef skirt stakes or ground chuck
1/2 cup chicken or beef stock or broth
2/3 cup dry white wine
2 T tomato paste
1 1/2 cups whole milk

Heat oil in large saucepan over medium heat. Cook pancetta or bacon, stirring, until it releases its fat, but is not browned, about 8 minutes. Increase heat to medium and add: carrot, celery, onion. Cook, stirring, until onions are translucent, about 5 minutes. Add and brown the ground beef (or steak or chuck). Stir in broth, wine, tomato paste. Reduce the heat to low and simmer gently, partially covered, skimming occasionally and adding whole milk, 2 tablespoons at a time from time to time as the sauce simmers. Cook until the sauce is the consistency of a thick soup, about 2 hours. Remove from the heat and let cool. Cover and refrigerate for up to 24 hours. Skim off the fat before reheating.
