Ingredients: 3/4 cups walnuts (coarslely chopped) 2 Tbl. extra olive oil (1 tablespoon at 2 different times) 3/4 Tbl. fresh thyme 1 large bunch of asparagus (rinsed and wood stem ends snapped off) 1/2 cup Gorgonzola cheese (crumbled) 1 Tbl. balsamic vinegar Kosher salt and fresh black pepper to taste

Directions:Toss the walnuts in 1 tablespoon olive oil and thyme on a baking sheet and the place in a 350º oven. Bake until the walnuts are golden brown approximately 8 minutes. You can make these 1 day ahead. Preheat the oven to 400º . Dry the asparagus and toss well. Sprinkle with 1 tablespoon of olive oil, salt and pepper. Roast the asparagus for 8-12 minutes depending on thickness of the spears. Remove the asparagus form the oven and toss the walnuts together. Sprinkle with the Gorgonzola cheese and serve. |

Notes: I love this recipe in early spring when the asparagus is plentiful and very flavorful. It is especially delicious with the salmon recipe.
