Cake Batter:
2 cups of plain flour
2 cups of granulated sugar
3 cups of grated carrots
1 1/2 cup oil
4 eggs
2 tsp soda
2 tsp cinnamon
1 tsp salt
1 tsp vanilla
1 cup chopped nuts

Icing:
1 8 ounce package of cream cheese
1 box of powdered sugar ( 1/2 bag)
1 stick of butter'
2 tsp of vanilla

Cake Batter:

Sift all dry ingredients together, then add oil, vanilla, eggs, and stir in nuts and carrots, mixing well.
Cut wax paper to put into bottom of cake pans - this should make 3 layers.

Bake at 350 degrees for 25 minutes.

Icing:

Beat the cream cheese, powered sugar, butter and vanilla together. Beat until smooth and spread onto cake.

Carrot cake was part of the special occasion cakes served on extended family gatherings like Easter, Thanksgiving, or Christmas. It was also served based on special family requests for birthdays, etc. I also enjoyed carrot cake. It was light and not too rich. I can still see this cake on the dessert table at our big family gatherings. We had wonderful cooks in the family and the food was wonderful!
