1 lg. onion, diced
4 T. chicken schmaltz
3 stalks celery, diced
1/2 lg. green pepper, diced
1/2 c. shredded carrot
1/2 c. sliced mushrooms
3 c. stale, grated challah (or other bread)
2 eggs
1/2 tsp. powdered garlic
1 tsp. salt
dash of ginger
dash of paprika
dash of pepper

Directions:
Directions:
Sauté onion in hot melted schmaltz for 2 minutes. Add celery, green pepper & carrot. Stir while cooking over moderate heat. Add bread crumbs & mushrooms. In bowl, beat eggs, then add the cooked mixture from the frying pan and stir well. Add seasoning when cooled. If mixture is too dry, add 1/2 c. hot water or chicken soup. This recipe makes enough stuffing to stuff a 5 1/2 - 6 lb. fowl.
