2 eggs
1 c. sugar
1/2 c. cooking oil
1 c. shredded zucchini (fresh or frozen)
1 1/2 c. self rising flour
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1 1/2 tsp. vanilla

Directions:
Directions:
Preheat oven to 350. Grease loaf pan. Beat eggs, add sugar and oil, stir in zucchini. Add dry ingredient to creamed mixture. Fold in nuts and vanilla. Bake for 1 hour or until golden brown.
