Ingredients:  
3 eggs, beat for 5 minutes
1 c. white sugar
2/3 c. cooked pumpkin
1 tsp. lemon juice
Gradually beat into eggs.

Sift together:
3/4 c. flour (self rising)
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg

Filling recipe:
1 c. powder sugar
8 oz. cream cheese
4 tbsp. soft butter
1 tsp. vanilla

Cake mixture:
Mix top 5 ingredient and then fold dry ingredients into pumpkin mixture and spread into greased and floured 15x10x1" pan. Bake at 375º for 15 minutes. Turn out on towel. Sprinkle with powdered sugar. Roll up and leave until cool.

Filling:
Cream all together until smooth.

Unroll cooked cake. Spread with above mixture and reroll. Wrap in foil and put in the refrigerator overnight or until good and cold. Slice and serve.
