2 Boneless, Skinless Chicken Breasts
Salt and Pepper for Sprinkling
2 tbsp. garlic and herb cheese spread
2 Thin Slices Deli Ham
4 Slices Roasted Red Pepper
4 Basil Leaves
2 Slices Mozzarella Cheese
1 tbsp. Parmesan Cheese
Paprika for sprinkling

Directions:
Directions:
1) Preheat oven to 350. Coat a rimmed baking sheet with cooking spray. Place chicken breasts on a cutting board and, with a sharp knife, cut each breasts in half horizontally, cutting it only 3/4 of the way through.

2) Open each breasts like a book, then lightly sprinkle both sides with salt and pepper. Spread garlic and herb cheese spread evenly on half of each breast and top each with ham, roasted peppers, and basil. Fold overtop half of each breast; place on baking sheet,

3) Bake 25 to 30 minutes, or until chicken is no longer pink in center. top each breast with a slice of mozzarella cheese, sprinkle with Parmesan cheese and paprika, and bake for 5 more minutes, or until cheese is melted. Serve immediately.
