1/4 cup All-Purpose Flour
1/4 tsp Salt
1/4 tsp Black Pepper
1 Egg
2 tsps. Water
2 tbsp. Butter, divided
2 Boneless, Skinless Chicken Breasts, pounded to 1/4-inch thickness
1/3 cup White Wine or Dry Vermouth
2 tbsp. Lemon Juice
1 tsp Chopped Fresh Parsely

Directions:
Directions:
1) In a shallow dish, combine flour, salt, and pepper; mix well. In another shallow dish, beat egg and water.

2) In a large skillet over medium heat, melt 1 tablespoon butter. Cut each piece of chicken in two. Dip chicken in flour mixture, then in egg, coating completely. Saute chicken 4 to 5 minutes per side, or until golden; remove to a paper towel-lined platter.

3) Add remaining butter, the wine, lemon juice, and parsely to skillet; mix well, then return chicken to skillet. Cook 2 to 3 minutes, or until sauce begins to thicken and no pink remains in chicken. Serve chicken with saucefrom pan.
