Rustic Italian Tortellini Soup Recipe

12 oz. Italian sausage (chicken, pork or turkey, hot or mild), casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14.5 oz.) chicken broth
¾ c. water
1 large can of diced tomatoes, undrained
1 pkg. refrigerated chicken tortellini, cooked
1 pkg. fresh baby spinach, coarsely chopped
2¼ tsp. minced fresh basil, or ¾ tsp dried basil
¼ tsp. pepper
dash crushed red pepper flakes
grated Parmesan cheese

Crumble sausage into Dutch oven; add onion. Cook & stir over medium heat until meat is no longer pink.
Add garlic, cook 1 minute longer
Stir in broth, water & tomatoes. Bring to a boil. Cook 5 minutes. Add tortellini & cook for 2 to 4 minutes.
Reduce heat add spinach, basil, pepper & pepper flakes. Cook 2-3 minutes longer or until spinach is wilted.
Serve with cheese.

You can cook the tortellini right in the soup, but I find it absorbs too much of the liquid; try it both ways.
