Ingredients: 1 1/2 cups (336g) salted butter (but I've used both salted and unsalted and it's been fine) 1 1/2 cups (284g) shortening 12 cups (1380g) powdered sugar 1 tbsp vanilla extract but I sometimes use more for a better flavor 6-7 tbsp (90-105ml) milk

Directions:Combine butter and shortening and mix until smooth.
Add 6 cups of powdered sugar and mix until smooth. (hint: I use a damp tea towel or paper towels to drape around mixer so the powdered sugar doesn't get all over the place.)
Add vanilla extract and 4 tbsp of milk and mix until smooth.
Add remaining powdered sugar and mix until smooth.
If needed, add more milk, 1 tbsp at a time, until desired consistency is reached. |

Notes: I've tried a bunch of icing recipes and this is the best buttercream one I have found. This should be enough for a 5-6 inch three layer cake and will give you a bit extra for a two layer 8-9 inch cake but you can save some and use it for decorating.
