7-Up Salad Recipe

2 small boxes lemon Jello
2 c boiling water
2 c. 7-Up
2 c. crushed pineapple, drained well - save the juice
1/2 bag mini marshmallows

Topping:
1 egg
2 tbsp. flour
1 c. sugar
2 pkg. of Lucky Whip or 1 lg. Cool Whip
cream cheese
crushed nuts
Directions:
Directions:
Combine the lemon Jello and the boiling water. Let cool then add the 7-Up and the pineapple. Pour into a flat pan and cover with mini marshmallow. Refrigerate until firm.

Topping:
Beat the egg slightly and add the flour, sugar and 1 cup of pineapple juice. Cook until it thickens. Let cooked mixture stand until cool. Mix the Lucky Whip according to directions (or just use Cool Whip) and fold into the above mixture. Spread that over Jello mixture. Grate the cream cheese on top and sprinkle with crushed nuts.
