1 cup butter
2 cup sugar
7 eggs
2¾ cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
(a dash of salt)
1 cup buttermilk
2 Tbsp. vegetable oil
1 tsp. vanilla extract
FROSTING:
1 cup milk & 1 tsp. vanilla extract
¼ cups all-purpose flour & 1 cups flaked coconut
½ cup butter softened
½ cup shortening
1 cup sugar

Directions:
Directions:
Pre-heat oven 350º
Cream butter; gradually add sugar, and eggs (1 at a time)
Combine flour, baking, powder, soda, and salt. Add to creamed mixture alternately with buttermilk and oil,
beginning and ending with flour mixture. Stir in flavoring.
Bake in (3) 9-inch pans for 20 to 25 minutes.

Frosting:
Combine milk and flour in a saucepan, cook until mixture begins to thickens. (set aside and cool)
Mix with other ingredients, Sprinkle top and sides with another cup of coconut.
cover and chill.
