1 c. water
1 c. flour
1/2 c. butter
4 eggs

Preheat oven to 400º. In a saucepan, heat water and butter to boiling. Reduce heat and add flour all at once. Stir approximately 1 minute, until the mixture forms a ball. Remove from heat.

Beat in the eggs one at a time until the mixture is smooth, and when drawing your finger through the dough a channel forms and remains intact. (Remember you must stir thoroughly following each addition in order for the emulsion to occur!!). After last egg inches apart, on greased cookie sheet, shaping each into a circular mound. Bake 25 minutes, or until golden brown. Remove from the oven; allow to cool.

Slice each puff carefully so as not to cut all of the way through. Fill with your favorite filling.
