1 medium red onion, thinly sliced
1/4 cup apple cider vinegar
8 pork cutlets
4 cups red cabbage, shredded
1/2 cup pepitas, roasted and salted

**If you can't find pork cutlets, cut 2 8 ounce boneless pork chops in half crosswise and place between plastic wrap, pound to 1/4 inch thick and then slice in half**

Place onion in a small bowl with 1 Tablespoon vinegar and 1/2 teaspoon salt, stir well. In a 12 inch skillet heat 1 Tablespoon olive oil over medium high heat, season pork with salt and pepper. Add half the pork to the skillet and cook 2 to 3 minutes each side or until golden brown. Transfer to a plate, keep warm, repeat with remaining pork and cook then transfer to plate. Add cabbage and 2 Tablespoons olive oil to skillet, heat over medium heat about 10 minutes or until wilted, add onion mixture to cabbage along with remaining vinegar and the pepitas, toss to coat. Serve with pork.
