1 (15 oz.) can black-eyed peas, rinsed and drained
1 (4 oz.) jar diced pimentos, drained
1/3 cup chopped green onions
2 tbsp. distilled white vinegar
1 tbsp. vegetable oil
1/4 tsp. kosher salt
1/4 tsp. ground pepper

In medium bowl, stir together all ingredients. Serve immediately and cover and refrigerate up to one day.
