3 cups diced zucchini, peeled if you like
1 cup bisquick
1/2 cup chopped onion
1/2 cup parmesan cheese
2 tsp. fresh chopped parsley
1/2 tsp. salt
dash fresh pepper
dash oregano
1/2 cup olive oil
4 eggs

Directions:

Mix all ingredients together. Grease pie plate or medium casserole. Bake 350 for 45-50 minutes until brown.
