2 lbs thin red snapper fillets
flour
salt & pepper
1/4 C vegetable oil
4 T butter
2 T fresh lemon juice
2 T snipped, fresh parsley

Directions:
Directions:
Preheat oven to 400

Roll fish lightly in flour mixed with salt & pepper. Heat oil in skillet. Cook till brown on both sides, about 3 minutes on each side. Finish cooking in oven safe pan for 7-12 minutes. Remove fish to platter and keep warm.

To skillet, add butter and lemon, allowing it to simmer 1 minutes. Pour over fish. Sprinkle with parsley.
