Ingredients:  
2 lbs potatoes, peeled and finely grated
1 small onion, grated
2 eggs, well beaten
2 T flour
salt & pepper
vegetable oil for frying

Directions:
Directions:
Squeeze grated potatoes to get last of water out of them. Place in bowl. Mix in eggs, onion, flour and seasonings. Heat small amount of oil (like 2-3 T) in frying pan. Fry large spoonful, flattened out a little, till brown, and crisp on both side. Drain on paper towels. Serve hot with applesauce if desired.
