4 slices of bacon
1 med onion, thinly sliced
1 10 oz pkg Bird's Eye frozen chopped spinach, thawed and well-drained
1 5 oz pkg (box) scalloped potatoes mix (water & milk as directed on the box)
4 oz (1 C) shredded mozzarella cheese

Preheat oven to 400º

In a skillet, cook bacon till crispy. Reserve 2 T bacon grease. Crumble bacon. Set aside. In drippings, cook onions till tender. Add spinach. In a baking dish, put in dried potatoes and dry mix. Sir in boiling water and milk as directed on that box. Omit margarine. Then, stir in the bacon and spinach and onion mixture.

Bake uncovered at 400 for 40-45 minutes or until potatoes are tender. Sprinkle with cheese. Bake 2 or 3 minutes till cheese is melted. Let stand for 5 minutes before serving.
