This is another fly by the seat of your pants recipe :)

Small piece of ham
1 ham hock
2 bags of split peas
4-6 32 oz Chicken Stock or Bone Broth ( I always use low sodium)
3 stalks of celery, chopped
1 large onion, chopped
2-3 large carrots, chopped
salt and pepper to taste (ham will be salty so be careful w/salt)
3-4 tsp. Better than Boullion (chicken or vegetable - your preference. I also use low sodium option here too.)

Directions:
Place your ham and ham hock in pot and cover w/Stock/ Broth. Cook over medium heat until ham tender and falling apart.Remove ham & ham hock from pot, cool slightly and cut up meat. Place meat back in pot . Add split peas, celery, carrots, & onions. Season to your taste, Add Better than Boullion, mix.. Cook until thickend. Can serve with grated cheese and croutons.
