2 c. (1 lb.) cottage cheese
6 eggs
1 1/2 sticks melted butter
1 c. flour
2 tsp. baking powder
Maple Syrup
Raspberries/Strawberries

Mix 1st 5 ingredients together. Batter is thick and heavy...(like cement)
Best (easiest) made on a stick free griddle or fry pan. Put a spoonful on the griddle, and spread it out a little. They take a LOT longer to fry than normal pancakes so be patient. Make sure griddle is HOT!!!
Use a large spatula to flip. If pancake falls apart, you didn't wait long enough. When turned, pancakes should look blotchy on surface, not nice and and uniform like normal pancakes. (I still screw it up if I take some off too early.) If you take them off too soon, the inside will be "not quite done!"

When serving, you don't need any butter on top, just serve with Pure Wisconsin Maple Syrup. I'll take a cup of whipping cream with a T. of powdered sugar and vanilla extract and whip it up. (Not cool whip-not dream whip).
You can also top it with warmed raspberries, or strawberries.

I put everything on.
I"ll also take a batch of these and a batch of Hungry Jack Buttermilk Pancakes, and mix them together.

We all know that Grampa Bolle was a very stern man, and we've heard several stories.
Here's one that makes me see another side to him.
When my dad enlisted into the U. S. Army, before he shipped off to Europe in WW II, Grampa gave him a St. Benedict medal to keep him out of harm's way.
