2 cups all purpose flour
1 tables spoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
6 tablespoons unsalted butter, cold, cut in cubes
1 cup of apricots
1 cup heavy whipping cream, plus some for brushing on the scones
1 tables spoon raw sugar to sprinkle on top

Preheat oven to 400 degrees. Sift dry ingredients: flour, backing powder, salt, sugar. Using pastry blender or forks, cut the butter into the dry ingredients to resemble coarse crumbs. Make a well in the center of your mixture and pour in the cup of heavy whipping cream. Fold in the apricots and mix just to incorporate.

Cut into desired shape. I make mine look like small biscuits. Place on cookie sheet. Brush on some heavy cream on top and sprinkle with sugar. Bake at 400 degrees for 15-20 minutes, until light golden brown. Makes 8-16 depending on the size.

I had never had a scone before I tried these. I didn't even know I liked apricots. I had gone to Glenlaurel Inn for a friends wedding and they shared this recipe with us.
