1 Can drained and diced Artichoke Hearts
1 Pkg. Frozen chopped spinach
1 1/2-2 Cups Sour Cream
1 Pkg Cream Cheese
1 Bag Italian blend cheese ( Provolone, Parmesan, Romano, Asiago mix)
2 Cups Mozzarella Cheese
4 Cloves Minced Garlic (if pre-minced 3-4 Tbsp.)
3/4 Cup diced Vidalia Onion
Salt & Pepper to taste
1 Stick of Margarine/Butter (Your preference)

Preheat Oven 375 degrees.

Cook Spinach in the microwave per pkg instructions. Meanwhile, add stick of butter to large, deep skillet in low/med heat till melted. Add garlic and onions and saute for about 6-7 mins then add spinach. The spinach will absorb alot of the butter which will help with the bitterness of the spinach and give you a nice rich buttery flavor. Cook down for about 5-6 mins then add cream cheese and melt down on low/med. Don't cook too high or it will cook/burn your cream cheese. You want it melted down, once done you can incorporate sour cream and whole bag of Italian mixed cheese. Melt and incorporate into a nice thick creamy dip. You may want to add 1 cup of mozzarella to the dip itself if you prefer it to be extra cheesy. Lastly, add and mix in the diced Artichoke hearts. Once mixed sprinkle the remaining cheese on top.

You may cover with foil or not your choice. Then bake dip in the oven 10-15 mins or until hot and bubbly. Serve with tortilla chips.

Noted: I have tried several recipes for this dip and I just didn't like any of them. So I combined and tweaked several and made it all my own. I will say this is a party pleaser and you won't find a more delicious recipe. Also this recipe makes quite a bit, it freezes really well and goes great on pizza crust. My kids call it the green pizza and love it!
